My Story

Hi there! I’m Nicolle, born and raised in Stamford, Connecticut with my only time out of state being when I did my undergraduate work at Johnson & Wales in Providence, RI. There, I got my Bachelors of Science in Culinary Nutrition and started my coursework to become a registered dietitian. While still working in a restaurant kitchen, I began my dietetic internship and Master’s degree at Lehman College in Bronx, NY. During my internship, we covered all necessary courses with my favorite aspect being my private practice rotation; I worked with one of the most successful (and one of the first!) private practice dietitians and absorbed all that I could.

But before all the college coursework plus the year and a half of free labor to obtain my MS, RD, CDN status…I was an average student, relatively shy and overweight little girl. Throughout middle and high school I sought out every diet, cleanse, detox tea or supplement just trying to look like the other, ‘prettier’ and ‘skinnier’ girls. I memorized every Cosmopolitan workout and tracked calories like a fiend. If there was a diet trend, I could tell you all about it first hand (except keto because we all have our limits). In doing this to foolishly chase a figure my body wasn’t designed to hold, I realized the research I was actually gathering; picking apart all the flaws in each of the ‘magical weight loss tricks’ and breaking weight loss
and weight gain down into the basics.

My practice is a culmination of all that I’ve learned, all that I’ve done thus far and all that I continue to learn and experience. A mix of intuitive eating and mindful living, sprinkled with a little nutella. It comes naturally for me to want to help people and push them in the direction of reaching their goals and loving the skin they’re in.
